Snacks / Appetizers

Mayberry has always been full of fun, song and foods here are some tasty snacks and appetizers to enjoy in your corner of Mayberry with your family and friends.

Aunt Bee's Kerosene Cucumbers

6 tsp whole allspice
1 bunch dill                 
6 lumps alum
6 hot peppers             
1 quart cider vinegar
6 cloves garlic             
2 quarts water
6 slices onion              
1 cup salt

Wash and dry enough cucumbers for six sterilized 1-quart jars.  In the bottom of each jar place a portion of the dill, 1 hot pepper, 1 clove of garlic, 1 slice of onion, 1 tsp of whole spices, a small lump of alum, and cucumbers.  In a saucepan combine the vinegar, water, and slat.  Let the mixture come to a rolling boil, the pour into the jars.  Seal immediately.  Makes 6 quarts

Bagel Bites

1 (3 ounce) package cream cheese, softened
6 miniature bagels, split
3 ounces thinly sliced fully cooked ham
4 ounces Cheddar cheese, thinly sliced
6 thin slices tomato
1 tablespoon chopped red onion
1/4 cup pineapple tidbits
1/4 teaspoon dried parsley flakes

Spread cream cheese over cut sides of bagels. Place on an ungreased baking sheet with cream cheese side up. Cut the ham and cheddar cheese into 2-in. squares; place over cream cheese. Top half of the bagels with tomato and onion and half with pineapple and parsley. Bake at 350 degrees F for 10 minutes or until cheese is melted.

BBQ Wings 

2lbs chicken wings
1 ¾cups BBQ sauce
½ cup chicken broth

Place chicken on broiler pan and broil 5- 6 inches from heat for 15-20 minutes turning chicken once. Combine BBQ sauce and chicken broth, place cooked chicken in a 13 x 9  pan, cover with BBQ sauce and back 45minutes to 1hr. Cool 20 minutes place on platter and serve warm

Candied Kielbasa

3/4 bottle of maple syrup
2-1/2 cans of ginger ale
2 pound kielbasa

Slice kielbasa into quarter-size pieces 1-1/2 inches thick.  Put all ingredients in a slow cooker on high until hot.  Turn on low and cook for 24 hours.

Chicken Sandwiches 

2 c. cold diced chicken 
1 pkg Pillsbury crescent rolls
3 oz Philadelphia cream cheese  
1 tbsp. butter melted
1 small onion, diced  
¾ c. crushed seasoned croûtons
½ tsp pepper   
2 tbsp. milk
1 tbsp. chopped pimentos

Separate rolls and with rolling pin, roll flat. Make chicken mixture by adding all ingredients together, except butter and croûtons. Put 2 tsps of mixture in center of roll and pull sides up to close. Place on ungreased cookie sheet. Pour melted butter over top of each roll and sprinkle with croûtons. Bake at 350 until rolls are golden brown in color.


4 pounds round steak or venison
4 tablespoons onion powder
1 1/3 teaspoons black pepper
1 1/3 teaspoons garlic powder
2 pinches salt
1 teaspoon dry Italian-style salad dressing mix
1 cup Worcestershire sauce
1 cup soy sauce
1 teaspoon hot pepper sauce

Cut meat into strips no thicker than 1/4 inch. In a large bowl, mix together onion powder, pepper, garlic powder, salt and Italian seasoning. Stir in Worcestershire sauce, soy sauce and pepper sauce. Place meat into a container, and combine with marinade. Cover, and refrigerate 24 hours.
Place oven rack on the highest level. Place aluminum foil on bottom of oven to catch drips. Preheat oven to 150 degrees F (65 degrees C).
Insert round toothpicks through the tops of the strips of meat, and hang them from the oven rack. Bake in preheated oven for 4 hours, or until dried to desired consistency.


Mexican Pizza 

1lb Ground Beef
2tblsn Taco seasoning**
2 (16 ounce) can refried beans
6 (10 inch) flour tortillas
3/4 cup salsa
1 cup shredded Cheddar cheese
1 1/2 cup shredded Monterey Jack cheese
3 green onions, chopped
3 (plum) tomatoes, diced
1/3 cup finely chopped jalapeño peppers (optional)
1/2 cup sour cream (optional)

Preheat the oven to 350 degrees F (175 degrees C). Coat 3 pie plates with non-stick cooking spray.
Lay one tortilla in each pie plate, and cover with a layer of refried beans(2/3 of a can). Spread 1/3 of the Taco Seasoned Beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
Remove the plates from the oven, and let cool slightly. Spread 1/3 of the salsa over each top
tortilla. Cover each pizza with 1/3 of the Cheddar and Monterey Jack cheeses. Place 1/3 of the tomatoes, 1/3 of the green onions, and 1/3 of the jalapeño slices onto each one.
Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces

Reuben Sandwich

10 slices dark rye    
10 slices Swiss cheese
10 slices corned beef    
½ cup drained sauerkraut

Place 1 piece of corned beef, topped with portion of sauerkraut and a piece of Swiss cheese, between two pieces of Dark Rye. Put in greased frying pan and brown on both sides as if making grilled cheese sandwiches.

Pigs in a blanket (kid style)

2 ¾ - 3 ¼ cups all purpose flour
1 package active dry yeast
1cup warm water (120 – 130 degrees)
2tblsn vegetable oil
8-12 hot dogs or wieners
4-6 slices of cheese

3tblsns of water
1 egg

Combine yeast and warm water and mix well. Add ¼ the flour  at a time until most of the flour is mixed in. divide dough in half or more and allow your kids to help kneed it for about 5 minutes working the dough. Let rise 15 minutes.

  Combine water and egg Divide dough into 8-12 equal pieces and roll out flap (about a 6inche circle) place ½ a piece of cheese in center top with hot dog and brush egg of dough with egg wash and fold edges over sealing the center bush outside of dough with egg wash and poke hole in the center of the part pointing up. Bake in preheated 400 oven 15-18 minutes. Let cool 15minutes on rack before serving.

Spicy Orange Wings



2lbs Chicken wing pieces
½tspn onion powder
½tspn garlic powder
¼tspn cayenne pepper
¾cup Orange Marmalade
2 dashes hot sauce
2tblsn margarine
1tblsn vegetable oil

In a large resealable plastic bag combine onion powder garlic and cayenne pepper add chicken and toss to coat all the pieces

In a large (at least 12iches) heat oil and 1tblsn butter over medium heat add chicken and cook turning occasionally 20-25 minutes. Remove chicken to a platter and keep warm. Drain skillet.
In same skillet heat butter add Marmalade and pepper sauce and bring to a boil over high heat stirring occasionally, scrapping the brown bits off the bottom of skillet. Return chicken to skillet reduce heat to low, toss chicken to coat, heat thoroughly. Garish with some thin slices of orange if desired.
 For oven baked:
Season as above, then arrange wings in bottom of broiler pan lined with foil and back 425 for 40 or until thoroughly cooked brush with marmalade mixture and bake an additional 10minutes

Twice Baked Potatoes



6 large baking potatoes
1 (16 ounce) container sour cream
24 Frozen Cheese Sauce cubes**
1 stick butter
salt and pepper to taste
8 bacon strips, cooked and crumbled
3/4 blanched broccoli cut in small pieces
1/4 teaspoon paprika

Preheat oven to 350 degrees F (175 degrees C).
Bake potatoes for 1 hour or until soft.
Cut enough of the skin off the top of each potato to be able to scoop the potato out of the skin and into a mixing bowl.
Add butter, sour cream, 1/3 of cheese sauce and mix together well add in broccoli . Add salt and pepper to taste.
Fill the skins with the mix and top with cheese cubes and crumbled bacon. Bake for 20 to 25 minutes just until heated through.

**using those old annoying ice treys fill the bottoms of each cube space 1/3 high with cheese sauce and freeze 3hrs.
