Sauces and Dry Mixes

Here are some tasty recipes for pasta and BBQ sauces, dry rubs and even Tex Mex night seasoning mixes.

Alfredo Sauce

1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan cheese
1/4 cup chopped fresh parsley

Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve. Serve over cooked pasta, cubed cooked chicken. Any vegetable you like.

BBQ Sauce

12oz catsup
2tblsn onion powder
4oz soy sauce
2tblsn garlic powder
2tblsn Worcestershire sauce
1tspn white pepper        
4oz water
½tspn cayenne pepper
5tblsn brown sugar
½tblsn prepared mustard

In a medium to large sauce pan combine all ingredients and heat to a boil; reduce heat simmer 15minutes. Serve. hot or cold
Cheese Sauce

2cans Cheddar Cheese Soup
1/2cup Milk or 3/4 cup Heavy Cream
1tspn Onion Powder
1tspn Garlic Powder
1/2 tblsn Butter

In a medium microwave bowl melt butter (10 seconds) mix onion and garlic powder to combine add milk or cream and one can of cheddar cheese soup, combine with Wisk. When combined add second can of cheddar cheese soup and combine. Serve hot or cold over nachos, with chicken rice and many other meals.
For an extra kick add 1 red pepper finely chopped, 1 jualonpina (seeded and cleaned) finely chopped to butter and heat 25 seconds on high instead of 10. combine other ingredients as described above.

Pizza Sauce

1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon ground oregano
1 1/2 teaspoons dried minced garlic
1 teaspoon ground paprika
1 teaspoon onion powder
Combine all ingredients let rest at room temperature 30 minutes before using.

Pizza Sauce II

1 (6 ounce) can tomato paste
1 1/2 cups water
1/3 cup extra virgin olive oil
2 cloves garlic, minced
ground black pepper to taste
1/2 tablespoon dried oregano
1/2 tablespoon dried basil
1/2 teaspoon dried rosemary, crushed
Combine all ingredients in a sauce pan heat to light boil and cool 30 minutes before serving.

BBQ Dry Rub

1 tablespoon ground black pepper
1 tablespoon ground white pepper
1 tablespoon sugar
2 teaspoon cayenne pepper
2 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon ground oregano
4 tablespoon paprika (the sweet kind -- not the hot kind)
1 teaspoon dry mustard
1 tablespoon celery salt
1 tablespoon salt

Combine all ingredients thoroughly and store in air tight container. Use rub into ribs or steaks prior to cooking great seasoning for Beef, Chicken or Pork.
Taco seasoning mix

1/4 cup unbleached all-purpose flour
1/2 cup dried onion flakes
1 teaspoon dried minced garlic
1 cup chili powder
2 teaspoons dried oregano
2 teaspoons ground cumin
4 teaspoons salt

In a jar with a tight fitting lid, combine flour, onion flakes, garlic, chili powder, oregano, cumin, and salt. Close lid securely, and shake well to mix contents. One half cup is equivalent to 1 (1.25 ounce) package of taco seasoning.

Taco Seasoning II

1tspn onion powder
1/4 cup chili powder
3 tablespoons salt
4 teaspoons cornstarch
1 tablespoon dried minced garlic
1 tablespoon ground cumin
1 tablespoon crushed red pepper flakes
2 teaspoons beef bouillon granules
1 1/2 teaspoons dried oregano

Combine the first nine ingredients. Store in an airtight container in a cool dry place for up to 1 year. For tacos crumble and brown ground beef add seasoning and water cook 2-4 minutes until water is most absorbed.
use 2tblsn seasoning and 1/3 cup water for every pound ground beef.
